Honey Haycorn Crumble Recipe

Pooh bear’s favourite treat; honey and Piglet’s favourite food; Haycorns are the inspiration behind this sweet nutty crumble.
The warm honey roasted nuts on top of this sticky sweet crumble make it extra special and it’s even dairy free.

REMEMBER: always ask permission from a grown-up before doing any baking

: ACORNS (or as Piglet calls them ‘Haycorns’) ARE TOXIC TO HUMANS! DO NOT EAT ACORNS or any nuts or seeds you find outside without expert adult guidance and supervision.

What you need:

Honey Nut Crumble Topping

  • 1 cup Dairy Free Oats

  • ½ cup Ground Almonds

  • ½ cup LSA (ground linseeds, sunflower seeds and almonds) ½ cup

  • 1 cup Desiccated Coconut

  • 1 tsp Cinnamon

  • 1 tsp Nutmeg

  • 1 or 2 handfuls of mixed plain raw nuts (almonds, pecans, cashews, hazelnuts, macadamia)

  • 2-3 large heaped tbsp honey*

  • ¾ cup coconut oil

Apple Base

  • 3 or 4 large apples (or 4 or 5 small apples)

  • ½ tsp cinnamon

  • ½ tsp nutmeg

  • 2 tsp honey*

  • 3-5 tbsp warm water

*Pooh bear loves honey and so do we …but we know it is expensive, so you can also use half of the amount of honey and substitute the other half with maple syrup.


What to do…

Prepare the Apples

  1. Peel the apples and get an adult to help you to quarter and slice them.

  2. In a small bowl, mix the honey and warm water.

  3. Pour the honey mix over the sliced apples.

  4. Sprinkle the cinnamon and nutmeg over the apples and gently stir to coat completely.

  5. Place the apples in your ovenproof dish, cover with a lid or foil.

  6. Put in the oven at 180c for 5-10 minutes to soften the apples.

Make the Crumble

  1. Combine all of the dry ingredients except for the whole raw nuts in a large bowl.

  2. Ask an adult to help you gently melt the honey and coconut oil together and stir until combined.

  3. Smash the whole nuts in a pestle and mortar or with a rolling pin and clean tea towel.

  4. Mix the nuts with a tablespoon of the warm honey mixture.

  5. Add the rest of the warm honey mixture to the bowl of dry ingredients and stir until it’s all good and sticky.

  6. Cover the apples with the crumble mixture, top with the honey-coated nuts and pop your crumble in the oven for about 20-30 minutes at 180c.

Serving suggestion: With a scoop of ice cream this crumble transcends into a whole new literary level, reminding you of the sweet condensed milk Pooh Bear is also so fond of, and adding a special gooey texture that compliments the crunch of the honey roasted nuts perfectly.

I recommend an ice cream with a subtle sweetness, like Almond Dairy Free ice cream or perhaps a classic Hokey-Pokey could be perfect! Let us know what combination you enjoyed!

Extra Yummy Tip: For a denser stickier crumble you can swap the desiccated coconut for more ground almonds or LSA which make the crumble even more sticky and brings out the flavour of the other nuts.
