One of our favourites is these never fail Sweetcorn Fritters -perfect for lunch boxes, snacks and dinners.

REMEMBER: Always ask permission from a grown-up before you start cooking

 


Ingredients:

• 3/4 cup Edmonds standard flour

• 1 tsp Edmonds baking powder

• ½ tsp salt

• ½ tsp pepper

• 1 egg

• 440 g can cream-style sweetcorn

• 2 tbsp oil

• tomato or chilli sauce and sour cream


 

What to do:


 

Sift flour, baking powder, salt and pepper into a bowl. 

 

Add egg and mix to combine. Stir in sweetcorn. 


 

Set aside for 10 minutes. 

 

Heat oil in frypan. Drop in large tablespoonfuls of mixture. 

 

 Cook until golden underneath.

 

Turn with a spatula and cook other side.

 

 Rest on paper towels.

 

 Serve hot with tomato or chilli sauce and a dollop of sour cream.
