Take inspiration from our fresh tasty quiche recipe. These quiche cups are packed

with ingredients to help to make you grow strong and feel good.

They are perfect to whip up at home and pack in your school lunchbox.

 

Prep time: 5-10 minutes

Cook time: 20-30 minutes

Makes: 12 Quiche cups

Grade: Easy

 


Ingredients:

• Wraps or tortillas

• Tomato puree

• Eggs 7-8 (or use 6 eggs and half a cup of milk)

• Sheep Feta or your choice of cheese

• Fresh basil

• Fresh parsley

• Cherry tomatoes

• Spring onion

• I cup Baby Spinach leaves

• Cooking Oil

 

Utensils:

• Cup cake baking tray

• Large bowl

• Whisk

• Large table spoon

   

Why should I use fresh herbs?

Fresh herbs are often expensive if you buy them at the supermarket but they have a delicious invigorating flavor and if you look after them properly they will continue to give you fresh herbs. They also look great on the kitchen window sill.

What to do:

1. Preheat the oven at 180C and grease the baking tray with oil

2. Fold one wrap in half and then in half again the other way, open it up and cut along the lines to create four equal slices. Repeat this with new wraps until you have enough pieces to fill each baking tray cup.

3. Put each slice into the cupcake trays pressing them gently into the bottom and spread tomato puree inside each quiche base

4. Chop up fresh basil and parsley, spinach, spring onion and tomatoes


 
     

 
 

5. Whisk the eggs together in a bowl and mix in your chopped ingredients and then spoon a large tablespoon of egg mixture into each case

6. Get an adult to help you put them into the oven and bake until the egg is cooked (if it's cooked it won't wobble when you move the tray). It will take about 20-30 minutes to cook through but it's good to check it after 15 minutes

 

 
     

Serving suggestion:

Enjoy your quiches with a salad and maybe some relish or chutney on the side. You could even pack these quiches into your school lunchbox or enjoy them for afternoon tea. SCRUMMY!
