  • 1 Cup wholemeal flour

  • 1 Cup white self-raising flour

  • 1 tsp baking powder

  • 1/2 tsp bicarbonate of soda

  • 1 tsp ground cinnamon

  • 1/3 cup brown sugar

  • 2 very ripe medium bananas, mashed

  • 1 egg

  • 1/3 cup buttermilk

  • 12 x (85g) small soild dark or milk chocolate eggs

  1. Preheat oven to 200 degrees Celsius.

  2. Grease a 12-hole (1/2 cup capacity) muffin pan or line with paper cases.

  3. Sift flour (add husks), baking powder, bicarbonate soda and cinnamon into a large bowl. Stir sugar.

  4. Whisk bananas, egg, oil, and buttermilk in a jug.

  5. Make a well in the centre of the dry ingredients. Add banana mixture. Using a large metal spoon, stir untill just combined (don't over mix)

  6. Evenly spoon half of the mixture into patty tins.

  7. Top each with a chocolate egg. Spoon over remaining mixture.

  8. Bake for 15 - 20 mins or until golden and firm to touch.

  9. Cool in patty tins for five minutes. Transfer to a wire rack to cool slightly. Serve warm.

They come out looking delicious!
