This Grinch inspired ice block tastes just like a smoothie and it's filled with loads of healthy ingredients that make it green and delicious. Just blend, freeze and enjoy!


What you need:

  • 1 banana

  • 1 avocado

  • 1 cup coconut milk

  • 1 ½ tbsp honey

  • 2 ½ tbsp lime juice

  • Strawberries ( for the Grinch's heart)

  • Desiccated coconut to decorate (optional)

  • Popsicle moulds

  • Blender or processor

 

What to do:

 1. Chop, scoop and measure the ingredients and blend them in a blender or food processor.

2. Taste the mix and add more Grinch sourness or Whoville sweetness as desired.

3. Clean the Popsicle moulds and fill each mould with the mix.

4. Slice the strawberries and cut them into heart shapes to represent the Grinch's heart that was “two sizes too small.” Slide these heart shaped strawberries down the side of the popsicle upside-down.


 
     

 
     

 
     

5. If you wish ,add a drop or two of lime to get an extra bit of zest running through your ice block and cover the bottom of the ice block with desiccated coconut before popping the bottom in place.

6. Leave in the freezer overnight.

7. Remove your Grinch popsicles from the freezer and run them under a warm tap to help you to remove the ice block from its mould.

8. Dip the popsicles in coconut and/or chocolate or just leave it as it is.
