These no-bake energy bars are sweet and soft with a delicious nutty crunch. Packed with nuts and honey this treat will give the energy needed to enjoy lots of Father's day outdoor activities!

This recipe was inspired by The Lemonade Stand cookbook written by Kathy Strahs. We have adapted her recipe but the amounts are the same.

What you need:

Prep time: 5-10mins
Setting time: 3 hrs minimum

  • ½ cup of honey

  • 3tbsp Peanut butter

  • 1 tbsp Coconut oil

  • 2 and 1/3 cups trail mix (look out for special offers in the pick and mix section of the supermarket as some nuts can be very expensive.)

  • ¾ cup of rolled oats

  • Tablespoon

  • A cup measurement

  • Mixing bowl and wooden spoon

  • Airtight container (for storing the bars)

  • Baking paper

  • 8x8 inch tin- or the closest you have

  • Saucepan

What to do: 

Safety: You always need adult supervision when using the stove or other heating appliances. Remember to wash your hands and keep your workspace clean.

1. Put the honey, peanut butter and coconut oil in a saucepan and get an adult to help you melt it all together on the stove until it becomes delicious sticky goo.

2. Tip the oats and trail mix into the mixing bowl and with the help of an adult, pour the warm sticky goo over the oat and nut mix and stir it all in until the oats are covered.


3. Line the tin with baking paper and pour the mixture into the tin. Make sure your mix is dispersed evenly and then cover it and put it in the fridge to set for at least 3 hours.

4. Once the mix has set it will be firm and can be lifted out of the baking paper and sliced.

5. Present your delicious energy bars either on a plate or wrap them with food safe paper and string for a special touch. Store your energy bars in an airtight container and consume within 2-3 days.
