Weetbix, Banana, Choc Chip Muffins Recipe

The next time your bananas start going brown and you get to the crumbs at the bottom of your Weetbix box, don’t toss them out! Instead, transform them into these yummy, healthy Weetbix, banana, chocolate chip muffins. They’re perfect for after school snacks or as lunch box fillers!


What you need:

  • 3-4 Weetbix (or the equivalent in crumbs)

  • 3 ripe bananas

  • 2 eggs

  • 3/4 cup milk

  • 85g softened butter

  • 1.5 cups self raising flour

  • 2 tablespoons maple syrup

  • 1 cup chocolate chips


What to do:

  1. Preheat the oven to 180C.

  2. Grease a 12 hole muffin tin tray. Better still, use silicone muffin cases!

  3. Mash the bananas with a fork so there are no large chunks.
    For slightly firm bananas try using a potato masher.

  4. Crush the Weetbix and stir into the mashed bananas.

  5. Slowly add the milk to the mash mixture and stir to combine. Set aside for the milk to soak into the Weetbix for 10 - 15 minutes.

  6. In a large bowl, beat the eggs and soft butter together.

  7. Slowly spoon the mash mixture into the eggs and butter mixture. Add maple syrup and fold to combine.

  8. Sift the flour into the mixture.

  9. Stir in chocolate chips until just combined - it’s ok if there are some lumps and bumps.
    Note: don’t over mix your muffin mixture or your muffins will come out hard.

  10. Spoon the mixture into your prepared muffin tin.

  11. Bake for 20-25 minutes, until golden on top and a skewer comes out clean.
