From Scratch, No Yeast, Mini Pizzas Recipe

Mini pizzas are perfect for lunchboxes, birthday parties and easy dinners. Make your own from scratch with Upstart’s no yeast, 2 ingredient pizza base recipe and add your favourite toppings…

What you need:

  • 1 cup self-raising flour

  • 1/2 cup plain, unsweetened Greek yoghurt

  • A rolling pin

  • A round cookie cutter

  • Pizza sauce
Top tip: You can make your own by mixing tomato paste with a little minced garlic and basil.

  • 1 cup grated cheese

  • Finely sliced ham (or your other favourite pizza toppings)

  • Crushed pineapple (if you like Hawaiian pizza)

This recipe makes approximately 20 mini pizzas.

REMEMBER...
Always ask permission from a grown-up before using an oven, or getting to work in the kitchen.

What to do:

  1. Preheat the oven to 180°C.

  2. Mix the flour and yoghurt in a large bowl until the mixture transforms into sticky crumbs.

  3. Using clean, dry hands knead the dough into a ball.
Top tip: if the mixture is too wet to knead, add a little more flour. If the mixture is too dry, add more yoghurt (1 teaspoon at a time) and mix.

  4. Use a rolling pin to roll out the dough on a floured surface or between two sheets of baking paper.
For thin base pizzas, try to roll the dough out to be only approximately 1cm thick. Experiment with different thicknesses to get the perfect crust for your preferences.

  5. Use the cookie cutter to create the mini pizza bases OR shape the dough to make one giant pizza base.
Depending on the size of the cookie cutter you use, this recipe should make approximately 20 mini pizzas or 2 large pizza bases.

  6. Cover each pizza base with pizza sauce

  7. Next, add grated cheese to each pizza.

  8. Finally, top with your favourite toppings.
The Upstart team made Hawaiian pizzas by adding finely sliced ham and crushed pineapple to their pizzas. We also loved the combination of finely sliced apricot and a little cream cheese.

  9. Bake on a lined baking tray for 8 - 10 minutes.

  10. Serve immediately or freeze them for up to 2 months as a tasty treat for later.
