PIZZA KEBABS

You Will Need:

8 skewers
½ loaf French bread, cubed
100 g sliced salami
1 green capsicum, cut into bitesized
pieces
8 fresh mushrooms, halved
1 zucchini, cut into 1–2 centimetre
slices
¼ cup low-fat Italian dressing
¼ cup grated tasty cheese
½ cup mild tomato salsa, warmed,
or tomato sauce, for dipping

Makes 8 kebabs
 
  


 1. If you are using bamboo skewers, soak them in water for at least half an hour before using them. This will stop them from burning when you are cooking the kebabs.

2. Preheat oven to 180°C.

3. Put the cubed bread onto an oven tray and lightly toast in the oven for about 5–10 minutes, making sure you don’t burn it.

4. Thread the salami, bread, and prepared veggies onto the skewers, in various combinations.

5. Place a sheet of baking paper on baking tray. Arrange skewers in a single layer on the tray.

6. Brush lightly with the Italian dressing and sprinkle each with a little cheese.

7. Bake for 20 minutes, until heated through and cheese has melted.
